Chef Salvatore Vicari is primarily inspired by the territory of the Val di Noto, brimming with culture, art, history, and a substantial gastronomic tradition, however experienced gourmands will also note international and modern influences.
The menu boasts a mix of dishes inspired by classic Sicilian recipes, from the simplest and most humble foods to elaborate entrèes, original creations, and interpretations of dishes from other cultures. The string that ties it all together is a cuisine based on quality ingredients and focused on providing a sensory experience.
All the ingredients are hand picked by our chef from what the surrounding area has to offer: whether it be flour, meat, fish, or dairy, they all show authentic flavours of Sicily. Vegetables and herbs are grown in the restaurant’s own allotment to guarantee quality and freshness.
As well as à la carte dishes, the restaurant offers tasting menus to lead customers through a journey from starters to desserts, carefully curated by our chef.
